小貼士1、椰蓉?fù)樗?成滿,烘烤時不會溢出嗎?放心,不會的。這跟葡撻還不一樣,葡撻的撻水膨脹率很高,所以我們一般倒7-8成滿,否則烘烤時容易溢出。但椰蓉?fù)樗?,由于椰蓉吸收了撻水,所以膨脹率較低,9成滿烘烤出來基本與撻皮平齊,看起來顯得飽滿有食欲!2、為什么我按方子烘烤,會烤焦呢?由于每個人烤箱不同,方子溫度時間僅供參考,需要根據(jù)自己烤箱脾氣靈活調(diào)整。比如你的烤箱實際溫度偏高20度,那你按方子190度烤,就相當(dāng)于你實際用的是210度在烤,當(dāng)然就會烤焦。但即便是溫度偏高,如果你保持觀察,上色了就及時出爐,也不會烤焦。所以烤不烤焦這種事,完全是個人主觀上原因,跟方子都沒多大關(guān)系哈。
